  • 1/2 cup (120 g) cream cheese frosting or buttercream frosting
  • 12 oz (340 g) candy melts in school colors (or white chocolate + colored food coloring)
  • 2 tbsp vegetable shortening (optional, for thinning chocolate)
  • Sprinkles, edible glitter, or colored sugar in coordinating colors
  • 24 lollipop sticks
  • 1/4 cup (25 g) mini chocolate chips (for tassels or accents)
  • Fondant in school colors (optional, for cap decorations)

Instructions

1. Bake the cake
Bake the cake according to package or recipe instructions. Allow to cool completely.
2. Crumble the cake
Crumble the cooled cake into fine crumbs in a large bowl.
3. Mix with frosting
Add frosting, mixing with a spatula or clean hands, until the mixture holds together when pressed (you may not need all the frosting).
4. Form balls
Scoop out tablespoon-sized portions and roll into 24 even balls.
5. Chill the balls

6. Melt coating
Melt the candy melts or chocolate in the microwave in 30-second increments, stirring until smooth. If too thick, add vegetable shortening to thin.
7. Insert sticks
Dip the tip of each lollipop stick into melted chocolate, then insert halfway into each cake ball.
8. Coat cake pops
Dip each cake pop fully into the melted coating, gently tapping off excess.
9. Decorate
While still wet, decorate with sprinkles and colored sugar. For graduation caps, press a fondant square on top and attach a mini chocolate chip with a dab of melted chocolate for the tassel.
10. Set and serve
Stand pops upright in a styrofoam block or cake pop stand to set. Let coating harden completely before serving.
